So This Is Christmas

Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

Komodo Kamado Ceramic Smoker - Two layers of insulation produces more satisfactory results

Metal charcoal griddles actually radiate and loose heat like a separate looses water. Low and Slow cooking in a ceramic smoker is how protein absorbs the complex flavours from the charcoal and your smoking woods added for a focused flavor profile.

The result of burning these massive volumes of charcoal is of course the enormous volumes of air that is needed to burn the fuel. Great volumes of of charcoal must be burned to maintain your low and slow cooking temps due to the large percentage of the heat and smoke literally lost out the chimney and heat radiated from the body. This hot dry air dries out your protein and wastes fuel and smoking wood. This is why people love to use smoker and grill.

Less airflow also means that your smoke will be in communication with your meat for more time before it's vented.

For comparison, one 16 lbs bowl of charcoal at 235f will last for about 85 hours. Most metal smokers must be refilled each 4-5 hours, these numbers speak eloquently. The insulation also provides great stability for set and forget low and slow cooking.. No more staying up all night tending your fire and chasing temperature.
