So This Is Christmas

Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

How To Make Chicken Fingers

Crispy, tender chicken fingers make an easy meal for families on the move. Made at home, they are healthier than take-out meals and fresher than frozen TV dinners. Using different types of coatings and sauces can make this dinner easy to serve often.

One of the keys to making tenders is to use all white breast meat. This will be tender and juicy, as well as healthy. These lean cuts are found in supermarkets as strips. They might have to be cut thinner so that they will cook easily.

Before breading, rinse the raw strips in cold water. Separate fat, if any, and then pat dry with paper towels. The fresh strips will need to be dry so they will not be soggy, or splatter if they are fried. Slice them thin with a serrated knife. Coat with egg whites. Allow the egg white to drip off, so that it is not too gooey. The crumb coating will be able to stick to this easily if the coating is even.

Create a coating mixture from packaged bread crumbs or air-dried bread that has been left out for a few days. Corn flake cereal can be crushed using a plastic bag or a food processor for a sweet, crispy coating. Flour is another coating option.

Once they have been evenly coated, place the strips in a single layer on a casserole dish or pan. Cook for about fifteen to twenty minutes, until the coating is a golden brown and the fillets have been cooked all of the way through. Check with a food thermometer to test for doneness. Deep frying can be messy, so be sure to use paper towels to absorb excess oil.

Coconut flakes can make an interesting tropical flavor. Also try adding pepper and other seasoning to the breadcrumb mixture. When well seasoned, the tenders will be delicious on their own and will not need any additional sauce.

When using a sauce, try not to use ketchup, as it is full of sugar. Honey mustard is a sweet alternative, as well as barbecue sauce. Making your own sauce can be fun and rewarding.

Always use an airtight container or freezer bag when storing these in the fridge or freezer. They can easily be ruined y freezer burn. Heat them in the oven for a few minutes for a very fast meal.

Chicken fingers are the perfect go-to dinner for families that are always on the move. Everyone loves them, and they're easy to top and dip. Healthy handmade dinners like these are easy to make and even easier to eat.
