Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

Maybe you have tried cooking before with the result of burnt, unrecognizable food or maybe, you simply don't have the patience to wait on a slow cooker to cook your meals. Do not give up on cooking! Below are some tips to help you make a variety delicious meals to share with family and friends!

When it comes to cooking a good habit to do after preparing garlic is to rub your hands on the stainless steel sink vigorously for about 30 seconds. This will remove the unwanted odor from your hands. Washing them less than 30 seconds will not take all the odor away.

When baking, here is a tip for eggs and butter. Let your eggs and butter set out overnight at room temperature. Doing so will soften the butter which will make it easier to spread, melt, and mix with other ingredients. The eggs will be easier to beat, and foaming egg whites will be easier as well.

When pressing sticky ingredients into a pan, such as marshmallow treats or cheesy casseroles, coat the back of a spoon with non-stick cooking spray before using it. This prevents the goo from sticking to the spoon and makes it possible to evenly smooth the food into the pan. You can reapply spray as needed.

Recipes are made to be guidelines for creating dishes you will enjoy. You do not have to specifically follow them if there is an ingredient that you would like to add or take away. You should feel free to be creative and experiment with the recipes you select.

If you love to cook but have minimal space for a library of cookbooks in your kitchen, consider purchasing a small laptop or net book exclusively for kitchen use. You can keep your own recipes and notes on the computer, pull up thousands of recipes online, and listen to your favorite radio stations or TV shows as you cook.

To discover when oil is really hot enough and ready for the food, look to its' surface. If it is no longer completely smooth and appears to be shimmering it is hot enough. When oil is allowed to over-heat it actually starts breaking down and releasing unpleasant compounds and will begin to smoke, so know when to say when!

Cooking made easier! Make soup stock in large quantities and put them in freezer safe containers to freeze for next time you need stock. This takes a lot of the work out of making homemade soup! Some people even think broth and sauce tastes better, after it is frozen.

If you are preparing a whole chicken or turkey, take the time to season under the skin as part of your preparation. By gently sliding your fingers between the skin and meat in the breast area and thigh area, you can create room for seasoning. Blend your preferred herbs and spices and slowly rub them against the meat under the skin. The skin will lock in juices and allow your seasoning to absorb into the meat.

When you open a can of tomato paste for just a spoonful and are wondering what to do with the rest, place dollops on a parchment-lined cookie sheet, and stick the sheet in the freezer. When the blobs of paste are frozen solid, transfer them to a freezer bag. You can then pull out just enough tomato paste for your next few recipes, without wasting partial cans.
