Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

You can get it in four different styles based on locations inside United States. People from each location claim that there's is the greatest. You might want to try them all and find out which one is your choice.

Cooking without sauce is known as dry barbecue. Sauce should never applied to the food. However, sometimes dry rubs and smoke are used to give extra flavor to the meat. While sauce can sometimes served as a side, it is never applied to the food while cooking or after the meat is done. Fans of this kind of cooking argue that controlling the amount of smoke is the secret to great cooking.

Cooking with sauce is known as wet barbecue. Sauce should always used on the food. Sometimes sauce can applied to the food before, during, and even after the cooking process. While it can be made in various ways, there are two types of sauce. Vinegar based sauce is popular in the east and in the south. Tomato-based sauce is popular in the west in the Midwest. People that like sauces argue that the secret to great cooking are the secret recipes of the sauce makers.

Barbecue that does not use sauce and specializes in cooking beef is known as Texas style. This dog uses open fire and smoke to cook the meat. You can use a variety of dry rubs and seasoning to add flavor to the food. However, sauce should never used. Does that like Texas style are more adamant about not using sauce than other groups. However, they do like sauce to be added as a side in a small bowl.

Memphis style is a wet type that specializes in pork. The port is usually smoke but can sometimes be cooked over an open flame. Dry rubs are heavily applied before and during the cooking process. Sauces are also heavily applied before during and after the cooking process. This means that the pork will be sealed with interchanging layers of dry rub and sauce.

Kansas City style barbecue is a wet kind of cooking that consists of a variety of different meats. Different types of spices and dry rubs can be applied to the meat before it is cooked. Sauce can be added to the meat as it cooks. Many times sauce can be added again once the food is done cooking. Kansas City has a unique sauce. It is tomato-based and very thick and sweet. Is possibly the sweetest of all barbecue sauces.

Cooking a whole hog to make pulled pork is called Carolina style. The hog is liberally rubbed down with spices and dry rub before it is cooked in the ground or in the smoker. This is a traditional Southern style of cooking. Once the hog is completely cooked, the pork is pulled off of the bone and mixed with a variety of spices. This pulled pork is then mixed with a special vinegar-type sauce to create the final meal.

Good BBQ Maryland is easy to find if you know what to look for. If you are looking for sauce, that is available. If you do not want sauce, that is available. You might want to try each of the four different types of barbecue. Instead of taking someone's word for it, try them and find out which one is sure favorite.
