So This Is Christmas

Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

For example, if a friend raves about a wine that they love and you know you are not a fan of that particular type, do not run out and purchase any. You should not drink reds and whites in the same glasses. Whites should be in narrower glasses so that warm air is kept from the wine's surface. Reds, however, are best in a wider, large-mouthed glass. This allows more air into your glass to let the wine warm and boost the flavor.

Do not believe the myth that all white wines have to be served chilled. There are many different textures among white wines, and they each respond best at various temperatures. While sauvignon blanc is best served chilled, wines like chardonnay and pinot grigo taste better at warmer temperatures.

Work on having a wide range of wines available. Having just white or red wine in a collection is not sufficient. To be a great host, you should experiment with all kinds of wine including white, sparkling, sweet and red.

While some types of wine get better with age, others behave quite differently. Keep this in mind before you prepare to stash a bottle away. Check the shelf life of the particular wine to find out how long you can store it before the flavor is negatively affected. Bordeaux is one wine that ages well.

There are many wonderful wines that are specifically designed to be paired with desserts. A dessert wine will taste sweeter than dinner wines. Port wines such as tawny port and ruby port offer a natural sweetness that compliments most chocolates and desserts. They are best served at around 55 degrees Fahrenheit.
