So This Is Christmas

Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

The Best Italian Restaurant Serves Fresh Fix-Ins

By Marissa Velazquez

When your family has a hankering for something from Italy, locate an italian restaurant nearby to become a new favorite for every occasion dinners. Spagetteria, papa's pizzeria or mama's lunch counters are going to have a reputation for good home-style foods. The name on the door will have the key to secret ingredients, given to them by a beloved older relative to help others enjoy a piece of their Italy.

When dinning at a cafe where the theme is romantic Italy, the atmosphere must match. If the music is off, like a western country tune or the lighting is flashy, it doesn't complement the style. Extremely fancy Italy experiences will have candles and cloth table coverings, but everyday diners will have a paired down version.

Before the main course, salads or appetizers are served. Salads are fresh, large and some will include luncheon meats such as Sopressata dry salami or prosciutto ham also with an array of chopped cheeses. Bruschetta or Crostini is another favorite prior to the dinner being served. Both of these start with a thick slice of bread with olive oil liberally spread on top. The bread is then toasted and topped with fresh tomatoes. That is where the similarities end.

Regional fair from Italia for starters or lighter meals include ravioli or stuffed pastas. Customarily these little squares are stuffed with a ground beef and seasonings and then placed in a deep fryer until golden brown. They're brought to the table with a side of red sauce and can be joined with a soup or salad for balance. An additional style of ravioli is the seafood stuffed pasta. This small square is filled with scallops, shrimp and lobster then boiled and smothered in a cheese, Alfredo or cream sauce.

A Stromboli and a calzone are two different regional sandwiches many Italy diners serve. These may look small, but once you begin eating them, you'll discover they are very filling. The Stromboli is folded with the pizza style toppings trapped inside before backing. A calzone is a name given for trouser or stocking but is basically a turnover or pizza half-moon shaped bread with sauce, cheese and other ingredients inside. The dough is salted bread.

Once you have enjoyed an appetizer, it's time to taste the main course. There are so many traditional meals coming to America from Italy, each sounding more delicious than the last. You may have a difficult time choosing the right one for your taste tonight. Be sure to read the details below each dish and ask questions of the wait staff if you are unsure what ingredients are in which dish.

Dinner menu items revolve around three major meat groups: seafood, beef or chicken and pasta. Naturally, going on a pure pasta diet is not helpful for your body. Even if you find gluten-free brands, which are basically brown rice, you'll be tired about an hour after eating only pasta. Chefs from various regions will cook seafood and chicken in different ways, all very delicious.

Before departing the italian restaurant, everyone should try a delightful pastry named Cannoli. Some cooks will use a light pastry crust while others use leftover pizza dough to create these cylindrical shaped goodies. They are fried for a few moments in hot oil wrapped around a metal pipe so they can be filled. The empty flaky crust is then packed with either cream cheese or ricotta. The cheese is blended with vanilla, a white wine, chopped pistachios and a light brushing of powdered sugar.
