Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

Notes On Mexican Black Bean Salad Recipe

Many types of foods have been discovered over time. Most of them are nutritious while others just add taste and flavors. Different people have the notion that in order to have a healthy meal, one needs to spend a lot of money and go through a complicated cooking process. That is not necessarily the case. Some of the most nutritious foods are cheap and easy to prepare. Apart from the main dish, side dishes are quite useful when it comes to adding flavor and nutrients. It is in this sense that we focus on Mexican black bean salad recipe.

They are so common in Mexico, Central and South America and other parts of the United States. They are easy to prepare with simple ingredients such as olive or canola oil, lime juice, garlic, cumin, tomato paste and cilantro. They can accompany main dishes such as Mexican burritos, tacos and feijoda dish of Brazil. Consumption of black beans has a wide range of advantages.

In Mexico, black beans is a common side dish or side order that usually accompanies any other form of main course. They are easy to prepare and cook but they add tasteful flavors to any dish. They are preferable since they can be taken by both anyone whether young or not since it has several ingredients which makes it so tasty and nutritious.

Presence of fiber in these beans makes them so useful in managing diabetes. The fiber also helps in lowering the cholesterol in the black beans. Cholesterol is bad for the heart. Different types of cancers are so common nowadays. Selenium, a mineral that helps in detoxification of some cancer-causing agents, is not found in most vegetables and fruits but it is available in these kind of beans.

The fiber present also helps in preventing constipation, promotes growth of healthy bacteria in the intestines and brings about better food digestion. They are available throughout the year and can be purchased from the local grocery stores. It is, however, important to note that they need to be soaked before cooking. It is a simple recipe to prepare.

This is for the purpose of getting rid of phytic acid that can actually cause a barrier to nutrients in the beans. Preparation and cooking process is simple. One needs to have olive oil, garlic cloves, cumin, black beans, chicken broth, lime juice and cilantro. You can even decide to use Monterey jack cheese if it is available. Use a big saucepan to heat the oil using medium temperature.

Add cumin and garlic and cook for about thirty seconds. Put in the beans and chicken broth and let the mixture cook for about five minutes, while stirring from time to time. Mash them, let it cook until thick as you continue stirring, for about twenty minutes. You may add some flavor using lime juice, pepper and salt.

In conclusion, Mexican black beans are a common side dish that accompanies other main dishes. They are highly nutritious with minerals such as potassium, iron, magnesium and phosphorous. They are easy to prepare and the ingredients used are easily available.
