So This Is Christmas

Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

How To Make The Best Peanut Butter Fudge

When you make your sweets at home, you can use your favorite ingredients, and you always know what to expect. Some people love some things, while others prefer something else, but everybody loves a good fudge. Peanut butter fudge tastes great in all combinations, especially when combined with really good chocolate, and that's why you simply cannot make a mistake with this lovely dessert.

Some recipes are more complicated than others, and some are really simple. In any case, start with simple ones. You will need only a few minutes to make really lovely desserts, and the secret is definitely in high quality ingredients. Simple desserts can be equally tasty, or even more tasty than really complicated ones.

So, you have to prepare the base. This is usually done by simply combining three cups of good choco chips and one small can of sweetened condensed milk. Place these ingredients in a bowl, put the bowl in the microwave and leave it there until everything is melted. Stir and add three large spoons of some fine peanut butter.

You should previously prepare the pan, lining it with parchment paper, or maybe with some foil. Once you mix all ingredients together, pour them into the pan and spread. Leave it to cool for a while, and then put into the fridge for some time, until the mass is hard enough for you to cut it into the cubes, or any other shape you prefer. You may also sprinkle something on for decoration.

This basic mixture made of chips, condensed milk and peanut butter is easy to enrich with just about anything tasty you can think of. Add chopped nuts, small pieces of jelly candies, crushed peanuts, soft caramel or even dried fruits. Sometimes is better to sprinkle the mixture with nuts when it is still warm, so they could stick to it better.

Caramel is simply perfect addition to one good choco peanut fudge. Making your own caramel is easy, so give it a try. Put two cups custard sugar in some pan and place it over low heat to caramelize. It's important not to stir until caramelized, but you should shake the pan every once in a while, just to make sure everything is equally caramelized. Now it is the time to add a can of condensed milk and to stir until done.

Now, when you have your caramel, add approximately two cups melted chocolate in. Use dark or white choco chips if you want, or simply cut and melt your favorite milk chocolate. After that, add two large spoons of your best peanut spread in and stir until smooth. Add chopped or crushed peanuts if you want, place into prepared pan, cool in the fridge to become hard enough to cut, and enjoy.

There are numerous variations you will enjoy discovering. For example, when you use full cream instead of condensed milk, and add a little bit of butter in, you might be surprised how much smoother your dessert will be. Sometimes such recipe might require more chocolate to get hard enough, but the taste is unbelievable. Since condensed milk is usually more sweet, you might need to add some sugar in.
