Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

If you want to use the meats and vegetables in your refrigerator before a shopping day, try using it in fried rice. Day old rice tastes best in stir fried rice because of its drier taste, but fresh rice will also work. Just add slightly less water than normal. The vegetables and meat will need to be fried in a small amount of oil. The rice and seasonings can be added after the meat and vegetables have had a chance to cook for a bit.

Try using ketchup as a secret batter ingredient for your fried foods. The ketchup can replace milk or egg in your preparation. Dip the food in ketchup before rolling it in breadcrumbs or flour. The tangy flavor of the ketchup adds a nice, unexpected kick to fried foods, and it will leave your friends begging for the recipe.

When you are cooking, use fresh ingredients instead of frozen or dried ones for the best results. The more fresh ingredients you use in your cooking, the better your dishes will be. Fresh ingredients have more flavor, and are less costly than frozen and canned ingredients.

Do you want to cook with fresh basil? Take some fresh basil and put some of it in a glass. Add water until the stems are covered. Put the basil on your counter and it will remain fresh for up to seven days! If you occasionally change its water, it will sprout roots.
