So This Is Christmas

Merry Christmas is such an infectious feeling I like to feel that way all year around.

So if you are visiting just before Christmas, just after Christmas or even here on Christmas day I am sure you will find something of interest for you and in the spirit of Christmas.

It may be said that Christmas is no longer a celebration but this must be spoken by people that have never had trouble closing their eyes on Christmas Eve in an expectation of what maybe left for them on the carpet under the tree.

I continue to look forward to the surprise on my Grandchild's faces to this day at Christmas events.

By Lee Larossier

Once you know how to make salsa, you will find yourself making it over and over again. It is a simple process. There is virtually no cooking at all. You are mainly chopping vegetables and putting them into the food processor. Once you see how easy it is you will want to keep making it. This makes a great small hostess or thank you gift.

You are able to add or take out ingredients that you do not enjoy. There are also many different types you can concoct. A basic recipe will have tomatoes, jalapeno, onion, lime, cilantro, garlic, cumin, salt and pepper. You will also need a food processor.

When your chopping your vegetables, don't work so hard. They are going into the food processor anyway so relax and just give them a rough chop. As you pulse them in the processor, they will get down to the size you want with little effort from you.

Cut the tomatoes into big chunks. Slice the jalapeno and remove the seeds. The seeds are where most of the heat is. Squeeze the lime to get the juice into a small container. Chop the onion.

Basically you rough chop vegetables or fruits for the base. Add some juice from a lemon or lime. Load up on bold flavors from spices, onion and garlic. Once you are done chopping, put them into a food processor and pulse until you get your desired consistency.

This is all that you need to know about how to make salsa. This is one of the simplest things that you can prepare in the kitchen. Its super easy and extremely versatile. You are able to prepare a spicy or mild variety depending on your likes. It's also a perfect dish to prepare ahead of time. It actually gets better tasting as it sits in the refrigerator. Keep it in a covered air tight container until ready to use it.
